Recipe - Blackened Chicken Alfredo


I am forever just throwing things together in the kitchen.  If it sounds like it woukd taste good together, I throw it in the pan and pray it tastes good when I'm done.
On to the recipe.  
30 -45 min.  4 servings.

Cook 1 lb. Linguini.

While cooking wash and dice 2 chicken breasts, then season well with blackened seasoning.
Chop (not dice, you want bigger than that) Green Peppers,  Red Peppers and  onion.  About 1/2 cup each.
Mince 1 clove garlic.
Heat olive oil on Sautee pan and add all ingredients.   Splash a lil white wine in there.  Then I added some Parmesan cheese, a lil Orageno  and some Creole seasoning.
Cook til chicken is done and veggies are tender.
While chicken and veggies are cooking pour 1 jar of alfredo sauce in pan to heat.  To it, add:  1 teaspoon white pepper, 2 Tablespoons Parmesan cheese, a splash of white wine.  Heat til warm.
Drain noodles, Do not rinse.
Noodles, top with alfredo sauce top with Chicken & veggies.   Serve with garlic toast.  Enjoy!
