Oh the hectic holidays.....

Good evening kids.

Sorry its been a bit since I've posted.   This time of year has been a bit hectic in our home, as I'm sure it is in yours.

Work, shopping, decorating, parties, and let us not forget we have to get that shopping done and still manage to have the house clean and presentable for our guests.  Again, where is the time?  How will it all get done?

Crockpot meals are great this time of year.  Might I suggest choosing ones that will make into something else the next night, or later, like a pot roast.  The left over meat makes great sandwiches and the vegetables and broth  make soup.  Don't want them right away?   Freeze it! 

Another great crockpot favorite of mine is spaghetti.   I make the sauce in the crockpot in the am, cook up some noodles and garlic toast and dinner is done! Save the left over sauce and freeze it.  Down the road, thaw it out, add some tomato pate, Italian sausage and a bit of parmesan cheese to thicken, boil up some lasagna noodles layer with cheese and bake. 

Did you forget a few people on your gift list?  Spend some quality time in the kitchen with your kids and bake up some cookies.  Kids love helping with stuff like this and they learn as well.  A nice variety of homemade treats on a dollar store tray,  topped with a hand made card is much more personal than store bought stuff and will be cherished.

It pains me to see how stressed and somewhat cross people tend to be this time of year.  Christmas is a celebration of Christ's birth.  We should be joyful.  Too many, too often are caught up in the commercial side that has been fed to us. 

Take time this wonderful season to remember the reason.  Volunteer at a shelter or soup kitchen, sponsor a needy family, etc.  At the very least share a smile and kind word.

I guess I've rattled on enough for now.
