Scalloped Corn Recipe
Scalloped Corn is a dish I've always loved. I've found that many people have never had it, or heard of it. If you like corn, you'll like this. Best of yet, it's easy!
2 eggs
2 cans cream style corn
1 1/2 sleeves crackers - crushed (saltine work great, but for a richer/sweeter flavor use Ritz)
1 Tbsp sugar
Salt & pepper to taste
Butter
In a 9" X 9" baking dish combine 2 cans cream style corn, 2 eggs, sugar, 1 Sleeve crushed crackers, salt and pepper. Mix well.
Top with 1/2 sleeve crushed crackers then put a few pats of butter on top.
Bake at 375 for 35 to 45 min. Til golden brown on top and heated through.
