Quick Key Lime Pie
A couple years ago the Kool-Aid pie was all over the internet. I decided to try it. Went to the store to purchase the items. Of course, I did not put together a list. Silly me got Jell-O instead of Kook-Aid. I did not feel like running back out, so I figured I would make up a recipe with what I had.
I remembered a recipe my grandmother used to make and somewhat based it off of that.
I started mixing and when I was done, John, the good sport he is when it come to tasting my concoctions, said it was awesome!! And so it began.
This pie has been a hit every time I have served it!
Here is the recipe. It makes 2 pies. Don't fret, one can be frozen for later.
2 graham cracker pies crusts
3/4 Cup very hot or boiling water
1 box lime jello
1 can crushed pineapple (drained)
1 package cream cheese (room temp)
1 can sweetened condensed milk (chilled)
1 tub cool whip
1 lime (sliced)
In water, mix jello til dissolved. Set aside.
In medium mixing bowl, mix cream cheese and sweetened condensed milk with blender on med speed til creamy. (About 2 min.)
Stir in Jello mix.
Then stir in cool whip.
Finally, stir in pineapple.
Spoon into graham cracker crusts and chill for at least 1 hour.
Garnish with slime slices and serve.
Get creative. I have used orange jello and diced mandarin oranges and a few other combinations.
